Meat Kebobs
Nothing says “outdoor cooking” like meat and veges that are cooked on a stick! These quick and easy treats are good for a midweek family meal or a weekend party.
Ingredients:
- Chicken, steak, lamb or pork – cut into 1 – 2” chunks
- Red, yellow and green peppers – cut into 1 – 2” chunks
- Red onion – cut into 1 – 2” wedges
- Cherry tomatoes
- Button mushrooms
- Olive oil
- Desired seasonings – kosher salt, freshly ground black pepper, garlic, rosemary, basil, oregano, etc.
- Skewers – metal or wood
Directions:
If you are using wood skewers, soak them in water for at least 30 minutes to prevent wood from burning when placed in the wood pizza oven. Fire up the oven so it is good and hot when you are ready to cook.
Cut all ingredients to approximately the same size for uniform cooking. Coat selected meat lightly with olive oil and seasonings and let sit for 20 – 30 minutes. Thread the seasoned meat onto the skewers, alternating with vegetables. You can select any veges you like that will hold up well when threaded on a skewer (just keep everything cut to approximately the same size). Do not thread ingredients too close together or they will not cook through thoroughly. Place finished kebabs on a baking tray.
Once the oven has reached about 200 degrees, and the smoke and flames have subsided, you can place the kebobs in the oven, turning occasionally for about 10 – 15 minutes (turn both the tray and the kebobs themselves). This time may vary depending on the size of the pieces, the type of meat selected, and the desired level of doneness.
Serve with your favorite dipping sauces.
Roasted Fruit and Ice Cream
Ingredients:
- An assortment of peaches, plums, pears, apricots and berries
- 3 T. sugar
- ½ each lemon and orange – juice and zest
- Splash of brandy
- 2 T unsalted butter, cut into small pieces
- Sprigs of fresh rosemary
- Vanilla ice cream
Directions:
Heat pizza oven and allow to reach temperature of approximately 200 degrees. Cut fruit into wedges and lay in single layer on a baking tray. Sprinkle with sugar, juice and zest from lemon and orange, and splash of brandy. Scatter butter and place fresh rosemary sprigs on fruit.
Once flames and smoke have died down, place tray of fruit into oven for approximately 5 – 10 minutes, turning occasionally, until fruit softens but is not mushy.
Remove rosemary. Serve warm over vanilla ice cream.
